You can use either a meat mallet or a rolling pin.&lt;br /&gt;Combine the flour, &lt;a class="cimotif" style="FONT-WEIGHT: bold; CURSOR: pointer; COLOR: green; BORDER-BOTTOM: green 2px dotted; TEXT-DECORATION: none"&gt;salt&lt;/a&gt;, and pepper on a dinner plate. On a second plate, beat the eggs with 1 tablespoon of water. On a third plate, combine the bread crumbs and 1/2 cup grated Parmesan. Coat the chicken breasts on both sides with the flour mixture, then dip both sides into the egg mixture and dredge both sides in the bread-crumb mixture, pressing lightly.&lt;br /&gt;Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook 2 or 3 chicken breasts on medium-low heat for 2 to 3 minutes on each side, until cooked through. Add more butter and oil and cook the rest of the chicken breasts. Toss the salad greens with lemon vinaigrette. Place a mound of salad on each hot chicken breast. I finally stole the recipe from my mom so here it is for all of you to enjoy&lt;span style="font-weight: bold;"&gt;:&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;&lt;/span&gt;Ingredients for Cookies&lt;/span&gt;:&lt;br /&gt;1/2 C butter&lt;br /&gt;1/4 C Brown Sugar&lt;br /&gt;1 egg yolk&lt;br /&gt;1/2 tsp Vanilla&lt;br /&gt;1 C shifted Flour&lt;br /&gt;1/4 tsp salt&lt;br /&gt;1 C chopped Pecans&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Directions: &lt;/span&gt;&lt;br /&gt;1) Cream butter and brown sugar then add egg yolk and vanilla.  When blended stir in flour and salt.&lt;br /&gt;2) Whisk egg white in small bowl and set aside&lt;br /&gt;3) Chop pecans, place in small bowl and set aside&lt;br /&gt;4) Make small 1" balls of dough, coat in egg white and roll in chopped pecans&lt;br /&gt;5) Bake 5 min at 375 degree oven, after 5 min remove and place thumb print in each ball.&lt;br /&gt;6) Bake an additional 8 min.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Ingredients for Icing&lt;/span&gt;:&lt;br /&gt;1/4 C Butter&lt;br /&gt;2 C powdered Sugar&lt;br /&gt;roughly 4 tbsp grenadine or maraschino cherry juice&lt;br /&gt;&lt;br /&gt;Mix ingredients together until icing is thick. BUT the canned ones never do a bowl of pasta justice. So, I invented an amazing concoction last night that went down well for everyone- that none was left! Add carrots, and simmer until tender, about 6 minutes.&lt;br /&gt;Meanwhile, bring a large saucepan of salted water to a boil. Cook noodles until just tender, about 6 minutes. Drain noodles, and add them to the pot of stock, along with shredded chicken meat. Season with salt and pepper. Heat until very hot.
